Egg White Frittata

This healthy, protein-packed egg white frittata is loaded with vegetables and perfect for a balanced, nutritious meal.

Ingredients:

  • 1 ½ cups egg whites
  • 1 small onion, finely chopped
  • 1 bell pepper, chopped
  • 1 cup spinach
  • ½ cup cherry tomatoes, halved
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh herbs like parsley or basil (optional)

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Heat olive oil in an oven-safe skillet over medium heat. Add the chopped onions and garlic, and sauté for 2-3 minutes until softened.
  3. Add bell peppers and spinach to the skillet, cooking for another 2 minutes until the vegetables are tender and the spinach wilts.
  4. Pour the egg whites over the sautéed vegetables, seasoning with salt and pepper. Cook for 1-2 minutes on the stovetop, just until the edges begin to set.
  5. Top with cherry tomatoes and transfer the skillet to the oven. Bake for 10-15 minutes, or until the egg whites are fully set and lightly golden.
  6. Remove from the oven and garnish with fresh herbs, if desired. Slice and serve warm.
