Ingredients:
- 1 ½ cups egg whites
- 1 small onion, finely chopped
- 1 bell pepper, chopped
- 1 cup spinach
- ½ cup cherry tomatoes, halved
- 1 clove garlic, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh herbs like parsley or basil (optional)
Instructions:
- Preheat your oven to 180°C (350°F).
- Heat olive oil in an oven-safe skillet over medium heat. Add the chopped onions and garlic, and sauté for 2-3 minutes until softened.
- Add bell peppers and spinach to the skillet, cooking for another 2 minutes until the vegetables are tender and the spinach wilts.
- Pour the egg whites over the sautéed vegetables, seasoning with salt and pepper. Cook for 1-2 minutes on the stovetop, just until the edges begin to set.
- Top with cherry tomatoes and transfer the skillet to the oven. Bake for 10-15 minutes, or until the egg whites are fully set and lightly golden.
